Melt 1 1/2 tablespoons butter in heavy large skillet over high heat until foaming. Pound the veal to an even 1/4-inch thickness with a meat mallet. (Casa Polizzi which was located in Belleville, New Jersey ) XOPHERCK from ASHEVILLE, although you are right that buying chicken that is not organic and has been grown in the horrible conditions all cheap chickens are is as bad as buying anything, there is a difference between that and buying non organic veal and that is that in order to produce "baby cow that people want to cook as veal" growers feed them nothing but milk so they actually starve for after only a week or so they naturally crave hay but are prevented from eating anything in order to keep their "red" meat white. However, we were totally disappointed with the quality of the food.
